Exotic soup trends: Pho and Co.

The new trend soup Pho originally comes from Vietnam and is traditionally eaten for breakfast. In particular, its health-promoting ingredients made the pho soup more popular. Pho contains anti-inflammatory zinc , immune-boosting vitamin C and digestive coriander. Traditionally, pho is a beef broth with beef or chicken, which is served with flat rice noodles and fresh herbs. The soup can be refined with lime pieces, chilli rings or fish sauce, if you like.

Another Far Eastern trend is ramen . A Japanese noodle soup, usually made from bone broth, thick wheat noodles, eggs, herbs, and vegetables. There are no limits to the imagination when it comes to the side dishes. Ramen often contains various types of meat and fish, tofu, spring onions, coriander, shiitake mushrooms, algae, bamboo shoots or Chinese cabbage. The noodles for ramen, which are already called ramen, are made from wheat flour, salt and water. They are available as instant noodles, fresh, steamed or dried. 

Bone broth as a food trend

What we already know from our grandmother is now totally hip again: Boiling bones. Bone broth is said to be good for our immune systems, tissues and bones. Not only Hollywood stars swear by  bone broth , which is supposed to even help you lose weight.  The nose-to-tail principle , i.e. using everything from animals from nose to tail, is an important step towards a more sustainable use of our resources, which is why we definitely want to give bone broth a chance.

The basic principle of the bone broth is to prepare good organic bones of beef, pork, lamb, poultry or game in water. It is important that some tissue and soup meat still adhere to the bones, as this is what gives the broth taste. The water is brought to the boil for approx. 4 to 6 hours and the resulting foam is regularly skimmed off. Every 20 minutes you should check that there is still enough water in the pot. You can add herbs, garlic, celery, onions or carrots and of course pepper and salt 1 to 2 hours before the end of the cooking time. Above all, apple cider vinegar should not be missing in your bone broth, as this is what ensures that the healthy substances are released from the bones.

Fresh from the meadow: wild herb soups

When the first rays of sun come out and spring begins, there are all sorts of wild herbs in the forest, on the meadows and along the way , from which wonderful soups can be conjured up. Dandelion, nettle, ground elder, dead nettle, daisies or wild garlic are welcome ingredients in our soup pot and children in particular have a lot of fun with collecting herbs. Wild herb soups are experiencing a comeback, especially in times of mindfulness and zero waste movements, and are therefore a soup trend for us that we would like to devote ourselves to this year. Since not all wild herbs are edible, you should only collect herbs that you know. Then nothing stands in the way of a healthy soup made from herbs that you have picked yourself.

Asparagus cream soup: how it works

Asparagus soup can either be prepared as an accompaniment to an asparagus meal or can be planned individually. In any case, asparagus water forms the basis of the fine creamy asparagus soup.

Cook your peeled asparagus covered with water – you can then prepare a fine asparagus soup based on the cooking water or the next day. Simply a classic roux of flour and butter deglaze with the asparagus water and simmer until the asparagus soup has a creamy consistency. With some recipes, vegetable broth or chicken broth is added to intensify the taste. Then season the asparagus soup with salt, pepper, sugar and nutmeg.

An acidic component in the asparagus soup also tastes particularly good – simply add a dash of lemon juice, a little white wine or a dollop of sour cream to the soup. To refine the asparagus cream soup, it is often alloyed with egg yolk – afterwards the asparagus soup must not cook anymore, otherwise the egg will clot. If you have not planned the cooked asparagus as a side dish or main meal, you can now add it in small pieces to the asparagus soup.

Cream of asparagus soup – creamy pleasure

For a particularly fine cream soup, for which the whole asparagus is to be used, you can also proceed as follows: Peel the asparagus from the head, cut off the woody ends and tips, cut the sticks into pieces and cook in water or vegetable broth, puree, asparagus tips let it boil briefly. Then season the creamy asparagus soup with cream, nutmeg, salt and pepper. For a classic asparagus cream soup with a good bond, a roux can be used as described above. It is also a tasty idea to simmer an apple in the soup – it gives the soup a fruity component and removes any bitterness from the asparagus. Or for a particularly fine cream of asparagus soup: Cook some saffron threads in the soup – these give the soup a nice color and also look nice as a decoration.

Creamy asparagus soup can be varied fresh and spring-like : with orange and ginger, with strawberries or Riesling, with vanilla or wild garlic. Cream of asparagus soup also tastes particularly delicious with fresh garden herbs. Prawns, crabs and smoked salmon, but also minced meatballs are a great filler in the asparagus soup. Give it a try!

In a Forsa survey for DAK, 98 percent of all parents stated that a balanced diet is important to them when it comes to their children’s health. So far so good.

… but reality looks different.

First graders should actually eat 200 grams of fruit and vegetables each day. In fact, girls only eat 150 grams of fruit and boys only 148 grams of fruit a day, as the DGE nutrition report shows. Things look even worse for vegetables: for girls, only 93 grams are served daily, for boys, only 90 grams!

One of the consequences of this unhealthy diet: more and more children are overweight! While an average of 10 percent of elementary school students were considered overweight in 1999, today it is between 15 and 16 percent. This is shown by the KiGGS health study by the Robert Koch Institute.

The infographic therefore clearly explains what a balanced and healthy diet means for schoolchildren. According to the aid food pyramid, the daily menu for children – and also for adults – should look like this:

• 1 portion of sweets and sugar
• 2 portions of fats and oils
• 3 portions of animal food

• 5 portions of fruit & vegetables

A serving is always about as much as fits in one hand. Accordingly, this is a larger amount in adults than in a school child. The infographic shows examples of a primary school child, but of course the information is individually different:

• A serving of fruit and vegetables for example corresponds with an apple or 1-2 handfuls of chopped carrots
• A serving of cereal, pasta or potatoes is roughly equivalent to a slice of wholemeal bread or 2 large potatoes
• A serving of animal food are – depending on size – in about 2 slices of cheese or 2 slices of sausage
• A serving of fats and oils corresponds to about a tablespoon with rapeseed oil or a tablespoon of butter
• For a primary school child, a serving of sweets means about 10 gummy bears or 2 pieces of chocolate

In addition, of course, do not forget to drink!

Elementary school children should drink at least one liter of water or unsweetened tea a day. That corresponds to about 6 glasses. But here too, many children have a lot of catching up to do: 59% of the girls drink too little and 48% of the boys consume less than one liter a day. Drinking is important! The consequences of insufficient fluid can also be quickly noticed by school children:

• Fatigue and lack of concentration
• Reduced physical performance
• Frequent headaches
• Problems with bowel movements (constipation)
• Tendency to urinary tract infections

Parents should always give their children drinks to school. Best mineral water and unsweetened tea.

Jackfruit – cultivation and import

Jackfruit is imported from the tropics. The raw harvested jackfruits are a result of thinning – the smaller fruits are removed from the 20m high jackfruit tree so that the larger ones can continue to grow and become particularly sweet. These raw jackfruit are then soaked in brine and find their way to us as preserves. If you do not eat meat for ecological reasons, you should keep an eye on the ecological balance of the tropical canned food.

Buy jackfruit

Buying raw jackfruit is not that easy, because the Asian store often offers canned ripe goods – even in their countries of origin, the jackfruit is usually eaten ripe. If the ingredients are not listed in German, it often helps to ask the staff. Thanks to their growing popularity as a meat substitute, raw jackfruit will surely be available straight or marinated in supermarkets soon. So keep your eyes open and feast!

We interviewed Julia Huthmann from Jacky F. With her company she imports organic jackfruit to Germany.

How did you discover jackfruit for yourself? What convinced you?

When I was living in Sri Lanka, I discovered jackfruit in a restaurant and mistaken it for chicken meat in a curry. The consistency was fantastic and so I started my first attempts at cooking. I was fascinated that jackfruit can be used in so many ways in the kitchen. At the same time I saw the many jackfruit trees, the fruits of which were not harvested, so I thought that this potential had to be used.

What is your favorite jackfruit recipe? Do you have an insider tip?

I find Jackfruit meatballs very tasty, but I also love a spicy curry. My tip is to always fry the jackfruit so that the pieces lose a lot of liquid. So the consistency comes close to tender chicken meat. I like to use smoked salt for seasoning. This gives the dishes an extra hearty note.

Do you pay attention to sustainable production?

Jacky F. is 100 percent organic. The small farmers in Sri Lanka are all organic certified and thus operate according to ecological standards. I also visited my partner on site several times in production and was convinced by the good working conditions. I also make sure to have a short, transparent supply chain, leave value added in the country of origin and avoid unnecessary transportation.

Thаt depends оn уоu, уоur location аnd thе season. But I suggest оnе hour іѕ thе minimum daily exposure (not necessarily іn thе middle оf thе summer, іn thе middle оf thе day).
Make sure уоu kеер уоur liquids uр. Drink whеn you’re thirsty. Avoid оr limit soft drinks.
Adequate rеѕt іѕ essential tо keeping уоur bоdу healthy. If уоu аrе burning thе candle аt bоth ends, don’t expect tо avoid аnу illness.
